Eggless Egg Salad
1 lb firm tofu (drained)
½ cup vegenaise (vegan mayonnaise)
1 Tbspn apple cider vinegar
1 Tbspn sugar
1 Tbspn olive oil
1 Tbspn turmeric
½ tspn salt
1 Tbspn capers
1 tspn fresh cilantro (optional)

Serves 6.

  1. Mix all ingredients together. Refrigerate.
  2. Put on whole grain bread or hamburger bun with lettuce, tomato and/or onions.
